Happy St. Patrick's Day with Karma Chow

Happy St. Patrick's Day to you Beautiful Gorgeous!
 St. Patrick's Day is celebrated on March 17, the saint's religious feast day and the anniversary of his death in the fifth century. The Irish have observed this day as a religious holiday for over 1,000 years. On St. Patrick's Day, which falls during the Christian season of Lent, Irish families would traditionally attend church in the morning and celebrate in the afternoon. Lenten prohibitions against the consumption of meat were waived and people would dance, drink and feast--on the traditional meal of Irish bacon and cabbage.
 
Yeseterday I posted my cooking video from the Karma chow Cook Book on how to get more "green" into your daily diet.

Here's a recipe from the Karma Chow website with Melissa Costello on a 'fake take' of tuna salad. So healthy and delicious!

Ingredients

  • 2 cans chickpeas, drained & rinsed
  • 1/2 small red onion, diced
  • 2 tbl capers, drained
  • 1 tbl freshly chopped dill
  • 1/4 c. chopped walnuts or almond slivers
  • 3 tbl grapeseed Vegenaise
  • 1 tbl dijon
  • 1 tbl apple cider vinegar
  • sea salt & pepper to taste
  • 2 tsp dulse flakes (optional)
Using a food processor fitted with the S-blade, grind chickpeas until flaky. Transfer to a bowl. Add remaining ingredients a mix well with a fork to incorporate. Season with salt & pepper.

I like it in a lettuce wrap, on crackers and bread as a sandwich. So good! Be sure and make extra for fast lunches later in the week!

St. Patrick's day GREEN with Karma Chow Cook Book

Hello Gorgeous and Happy St. Patrick's Day! Who is at the Ferryman's Pub?

For those of us are not, here is a short video demonstrating the Karma Chow Cook Book with Melissa Costello, the personal chef to P90X creator Tony Horton.

I love this cook book! The photos are beautiful and the the food is amazing. One thing to note-you like m see, may need to add some new staples to your pantry. At first, it may seem like you are buying a lot of extras but actually you are acquiring a new set of  "go to" items for your everyday cooking. It is worth it!

Happy St. Patrick's day! I love the legend of St. Patrick chasing the snakes out of his town in Ireland.
